Two that I have used extensively so far are Perch and Expression Engine.

I was wondering if any of you know any other CMS' worth looking at and trying out?
They don't have to be retrofit CMS' but it would be nice if they were!

I've been avoiding Wordpress, but I'm thinking I may need to just bite the bullet and give it a shot...now that I'm slightly more aware about modules and templates etc... :">

Hey Pui! I used CMS Builder by Interactive Tools (http://www.interactivetools.com) for my Thesis Project. It is a retrofit CMS similar to Expression Engine. A little more expensive but wonderful to use and the support team were excellent.

I am still avoiding Wordpress ;-)

I recommend ModX http://www.modx.com/

Why are you against Wordpress?

With CMS's, there are no "perfect" solutions, most require some kind of compromise on what you had in mind. Unless you are a programming wizard and can develop your own modules of course ;-)

@Jena Interactive Tools does look good indeed, although it is quite pricey! Might need to find an open source CMS to learn instead just so I don't go broke from it all!

@James Which leads me nicely to the fact that I have been looking at ModX lately and am playing around with it now, may show you guys the results when I've finished :-)

I will give Wordpress a shot, however I can't bear the thought of being so restricted in the design of the template. Like you say though, compromises may have to be made for the sake of learning, I may (or may not) be pleasantly surprised by it... my favourite blog is made using Wordpress! (Web Designer Wall (http://webdesignerwall.com/)) :)
